Thai Cashew Chicken Salad

4 C shredded green cabbage (1 small head)

2 stalks celery, chopped

½ C chopped green onion

1, 11 oz. can mandarin oranges, or 4 fresh seedless mandarins, peeled, segmented and halved

 Dressing

3 T rice vinegar

3 T toasted sesame oil

1 T minced fresh ginger, peeled

¼ C chopped fresh cilantro

¼ C chopped fresh basil

1 T soy sauce

1 T hoisin sauce

1 t sugar

½ t salt

 Topping

4 C grilled chicken, cooled and cut in strips

½-1 C chopped or whole roasted cashews

1/2 t toasted sesame seeds

 

Chicken can be made ahead by grilling, cooling, cutting, then flash freeze.
