Wonderful Peach Pie

7 ripe, but firm peaches, peeled** and slicedpeach pieDSC_0425
2 T lemon juice
1/3 cup all-purpose flour
1 cup sugar
2 teaspoon ground cinnamon
1/4 teaspoon or pinch ground nutmeg
1/2 teaspoon salt.
Mix all ingredients into a bowl and stir. Place into prepared pie crust. Place a second crust on top and crimp edges. I slice a “P” on the top crust for ventilation. Bake for 45 minutes at 350 F with the pie crust edges covered with foil or an edger.
** to peel peaches, boil water in a soup pot. Place peaches in boiling water for 30-60 seconds. Take out with a slotted spoon and peal. Set aside until all peaches are pealed. Slice after they cool.
