This meal can be partially made ahead. The marinade and sauce base were made and put into the freezer. When the sauce base is thawed, the sauce can be made ahead. The marinade has hot peppers in it, so the more it sits the hotter it gets!

marinating chickenChipotle Chicken Tenders With Creamy Cilantro Sauce (leave meat at home)

2 lbs boneless skinless chicken breasts (Can use any meat: pork, beef, chicken, fish)

1/2 C light brown sugar, packed

4 T fresh cilantro leaves, minced

3 cloves garlic minced

2 chipotle chilies in 4T adobo sauce, minced (1 12 oz. can is 16 peppers or 8 recipes)

1 ½ t salt

½ t chili powder

¼ t ground black pepper

Mix all ingredients and divide into individual’s bag or container.

DSC_9424SAUCE BASE:

¼ cup lime juice, from 2 to 3 limes

18 t garlic powder or 1 minced clove garlic

2 T cilantro leaves, minced

2 green onions, minced

½ t cumin

½ t salt

18 t ground black pepper

Place sauce base into a snack size bag. Label and place with marinade.

At Home:

To Sauce Base add:

¾ cup low-fat sour cream

¼ cup mayonnaise

Set sauce aside in refrigerator. Can be made a day ahead.

Slice chicken breasts (fish in cubes) in ½” strips across the grain.

Marinate chicken strips any length of time from 30 minutes to 24 hours. The more the chicken sits in the marinade the hotter it gets!

Soak bamboo skewers in water for at least 30 minutes.

Meanwhile, adjust an oven rack to the top position and heat the broiler.

Line a broiler pan bottom with foil and top with a slotted broiler pan top; spray the broiler pan top with nonstick cooking spray.

Weave each piece of chicken onto individual skewers.

Broil until the meat is lightly browned and cooked through, 5 to 8 minutes, flipping the skewers over halfway through.

Transfer the skewers to a serving platter and serve immediately with the dipping sauce.

OR

Use outdoor grill to cook chicken.vegies

OPTIONS:

To make beef, pork or chicken fajitas grill onions, colored sweet peppers, mushrooms or any vegetables of your choice. Serve with warm flour tortillas and sauce.

To make fish/shrimp tacos warm corn tortillas and serve with shredded cabbage and sauce.

Grilled Vegetables you can use any of your choice

1 large onion

Mushrooms

Toss with oil, salt and pepper,

Place in grill basket and grill on medium high for 15 minutes, turning often

Cilantro Lime Rice

1 ½ C White rice of your choice

Prepare rice in chicken broth and ¼ C lime juice

When rice is done, place in serving dish and sprinkle with fresh cilantro

Serve this meal with warm tortillas
