Greek Baked Fish

2 lbs cod fillets (or other white fish fillet of your choice)

15 ozs diced tomatoes

1 onion (large, coarsely chopped)

½ cup fresh parsley (minced)

½ cup fresh basil

1 tbls fresh thyme

1 ½  tbsps capers (small, drained)

8 garlic cloves (minced and divided)

1 red bell pepper (seeded and diced)

1 yellow bell pepper (seeded and diced)

8 stalks asparagus, cut into 1-2 inch pieces

1 cup kalamata olive (pitted and halved)

1 cup grated parmesan cheese

½  cup white wine

5/8 cup olive oil

Step 1:

Cover a 9×13 baking dish with olive oil. Place ½ the garlic into the oil and place the fish into the dish. Set Aside.

Step 2:

Cover bottom of large sauté pan with oil and sauté onion, garlic, peppers and remaining garlic until the aroma fills the room. Add tomatoes and herbs, bring to boil, then simmer for 10 minutes. Add wine and simmer until liquid is reduced almost nothing, about 20 minutes. During the last 10 minutes add asparagus and olives.

Step 3:

Cover fish with vegetable sauce, sprinkle capers into the sauce, then bake uncovered for 20 minutes at 400°F.

Serve over pasta or rice, garnish with fresh basil leaves and grated parmesan cheese.
