Peppy Pecan Crusted Salmon Fillet

1-2 lb. salmon fillet, skin on ok



¼ C honey

2 t Dijon mustard

Dash tobasco

Mix well in small bowl

2/3 C Peppy Pecans (recipe below)

2 T fresh parsley

2 T cold butter

Fillet with Sauce spread on top

Place first two ingredients in small food processor and blend until medium crumbs form. Add butter and pulse a few times until butter in crumbly with the other ingredients.

Set fillet skin side down on a baking pan that fits the fillet. I line it with foil so I can throw it away afterwards and have less mess. Cover flesh of salmon with sauce, then pecan crust.

Place in 425° F oven for 10 minutes per inch of thickness of the salmon.

**Turn broiler on and broil top of salmon for 1-2 minutes, or until golden brown, 6 inches away from heat. This will caramelize the crust.

1 C sugar

6 T water

2 t salt

1 t cayenne pepper

4 C pecans

Combine sugar, water, salt and pepper in a large saucepan. Cook and stir over medium heat until sugar dissolves. Bring to a boil and cook for 2 minutes. Add pecans and stir until they are coated with mixture, about 1 minute.

Transfer pecans to a large buttered baking sheet. Spread evenly in a single layer. Bake at 350 F until pecans are slightly brown, about 13 minutes. Transfer to wax paper, separating pecans if necessary. Cool completely. Store in an airtight container for up to 1 week in refrigerator, or freeze for up to 6 months. These are great to have on hand for snacks or on top of salads.

Roasted Garlic Mashed Potatoes (1 9×12 or 2 8×8 pans)

6 lbs (about 14 Cups) new potatoes preferred

1 C Parmesan cheese

½ head of garlic, roasted

1 t salt

2 t Montreal steak seasoning

1/4 C milk (to consistency)

1 C nonfat or lowfat sour cream

Bake potatoes. When cool, take off skins.


Add all other ingredients

Place in baking dish and freeze.

Thaw and bake 350° for 30 minutes or until warm all through.
