Italian Chicken Express (2 8×8 or 1 9×13 pans)

6-8 skinless boneless chicken breast halves flattened, or tenders

1 egg, beaten

1 C Italian seasoned breadcrumbs

½ t Italian seasoning

1/8 t black pepper

2 C marinara sauce

1 ½ C Grated Italian cheese (mozzarella, Parmesan)

¼ C fresh basil, chopped

2 sandwich bags

Spray pans with cooking spray.

Put 2 C marinara sauce and the basil in sandwich bag.

Put 1 ½ C cheese in sandwich bag.

Mix Italian bread crumbs with Italian seasoning and pepper.

Dip chicken in egg then roll in breadcrumbs.

Place in pan.

Cover with plastic wrap.

Place bag of marinara sauce and bag of cheese on plastic wrap. Put lid on.


Bake chicken at 350°F for 25 minutes or until internal temperature reaches at least 140°F. Take out to rest when done.

Bow-tie Pasta with Marinara Sauce

Boil pasta according to directions, drain and keep warm.

Warm  Marinara Sauce.

Place pasta on plate, top with chicken and then Marinara Sauce. Sprinkle cheese on top and  ENJOY!!!

1 T fresh lemon juice

2 cloves garlic, minced

1 t Worcestershire Sauce

1 t salt

1 t Dijon mustard

¼ t black pepper

½ C Olive Oil

¼ C Parmesan cheese

Mix all ingredients in bowl except oil.

After mixed slowly incorporate the oil to emulsify the ingredients.

Serve over torn Romaine lettuce topped with croutons and shaved Parmesan cheese.
