Parmesan Orzo Pasta
Roasted Green Beans
Roasted Garlic Sourdough with Oil and Vinegar
Lemon Meringue Pie
With this meal I prepared the green beans and salmon. I made the orange salad ahead of time. The ingredients for the pasta were all laid out, bread cut and wrapped in foil, then I began. First the pasta needed to start.
5-7 seedless oranges, peeled and cut into bite size pieces
1 t cinnamon
Place oranges and dates in a bowl, sprinkle with cinnamon and toss. If more cinnamon is desired, sprinkle into the mixture and toss again. Drizzle with honey and stir lightly.
Caesar Salad Dressing
1 T fresh lemon juice
2 cloves garlic, minced
1 t Worcestershire Sauce
1 t salt
1 t Dijon mustard
¼ t black pepper
½ C Olive Oil
¼ C parmesan cheese
Mix all ingredients in bowl except oil.
After mixed slowly incorporate the oil to emulsify the ingredients.
Serve over torn Romaine lettuce topped with croutons and shaved parmesan cheese.
Orzo with Parmesan
2 T olive oil
2.5 C uncooked orzo pasta
32 oz chicken broth
1 C parmesan cheese
Salt and pepper to taste
Warm olive oil in skillet over med. Heat.
Stir in orzo and sauté until lightly browned.
Stir in broth and bring to boil
Cover and reduce heat to simmer (low) until orzo is tender and liquid is absorbed, about 20 minutes.
Mix in parmesan cheese, salt and pepper to taste.
2 lbs. Salmon Filets, skin on (approx. 1/3 lb per person)
6 cloves garlic minced
1 lemon sliced in rounds
4 T fresh dill or 1 T dry dill
Brush olive oil onto the bottom of the pan.
Layer the pan with lemon slices and minced garlic.
Cut salmon filets to fit into the glass or ceramic baking pan you plan to use.
Sprinkle dill on meat side of filets.
Lay salmon, skin side up onto lemon slices. (Skin side is the fatty side. As it bakes the good fats will melt into the meat)
Set this aside until the last 15 minutes or so left on the potatoes.
Bake at 425° F for 10 -12 minutes. (The meat will cook once you take it out of the oven to rest. It’s important that you don’t overcook it or it will be dry)
Roasted Green Beans
Place olive oil on bottom of glass or ceramic pan. Place beans on top, not cut. Sprinkle with minced garlic, salt and pepper to taste. Roast at 425°F for 15 minutes.
As you will begin to see, I use what I have in the house to create the meal. I have a list of my freezer contents and their creation dates on the computer. Weekly or less I update the list by memory. I get the fruits and vegetables based on what is available at the stores in my area, most often what is on sale.
