Roasted Parmesan Potatoes

Baked Salmon

2 lb. salmon fillets

1 lemon

4 cloves garlic chopped

Sprig of fresh dill

Sprinkle of salt and pepper

Olive oil

I like to place foil on the baking sheet for 2 reasons: the pan I have is really old, and foil allows me to keep the mess together. I place all the skin etc. in the foil, wrap it up, place it in a plastic bag and save it in the freezer until trash day. Around here garbage is picked up once a week.

On the foil lined baking sheet:

Brush on olive oil

Sprinkle the salt and pepper on meat side of fillet.

Lay lemon slices, dill, and garlic under the fillets.

Place fillets on top of lemons.

Tent baking sheet with foil.

Bake at 450°F for 10-15 minutes depending on thickness of fillet.

If making the 2 dishes together, as in this menu, place in oven about 20 minutes before potatoes are done.

Take out of oven and let sit 5 minutes before cutting.

Roasted Parmesan Potatoes

3 lbs. potatoes, cut into bite sized pieces

I leave the skin on when cutting the potatoes.

1 C flour

3 T Seasoned Salt

1 t Emeril’s Seasoning

½ C butter or coconut oil or a combination of the two

1+ C parmesan cheese

Place flour and seasonings in a plastic bag and shake to mix.

As potatoes are cut, place them in the bag.

When all are cut shake the potatoes with the flour and seasoning mixture.

Place potatoes in a 9×13 baking dish which has been coated with some type of oil: butter, coconut oil, olive oil or vegetable oil.

I personally placed 2 T of coconut oil in the bottom of the dish and coated it on the bottom and sides.

Place potatoes in dish and sprinkle with ½ C grated Parmesan cheese, mix.

Dot with 1 T butter/coconut oil.

At 20 minutes, sprinkle ¼ C cheese and stir potatoes.

Repeat in another 20 minutes.

And Bake at 450°F for 50-60-minutes, until potatoes are soft.

Cucumber Tomato Side

Cut English cucumbers and tomatoes into small bowls. I peel some of the skin off the cucumbers before slicing them. Serve with salt, pepper, oil and vinegar.
