Baked Lemon Breaded Cod with Lemon Sauce

Baked Lemon Breaded Cod with Lemon Sauce

2 lbs Cod fillets, cut into portions or sticks

1 ½ C Italian bread crumbs

½ C parmesan cheese

1 t salt.

½ t pepper

Zest of 1 lemon

2-3 eggs

Mix all ingredients together except fish and eggs for the crumb breading.

Place 2 beaten eggs in shallow dish.

Place breading in shallow dish.

Dip fish into eggs, then breading.

Redip fish into eggs, then breading.

Place on rack on a tray.

Repeat until all fish are double dipped  J

Bake in 450 F oven or same temperature grill.

Grill for 10-20 minutes depending on thickness of cod.

Watch for doneness, making sure fish is taken out of heat when nearly done, yet breading is browned.

Prebaked lemon breaded cod

Lemon Sauce: (mine was made ahead in freezer)

Sauce:

8 thin lemon slices, removing seeds

4 T lemon juice

11/2 C chicken broth

4 T parsley, fresh, chopped

4 cloves garlic, minced

1/4 t black pepper

1+ C sugar (taste first)

Make Sauce:

Sauté lemon slices in pan. Add garlic, stir.

Add lemon juice and chicken broth. Bring to a boil.

Take out lemon slices.

Add parsley and take off stove to cool if freezing for making ahead.

If using right away, keep warm.

Sautéed Vegetables

Vegetables can be whatever is fresh in your area. In my case it was this:

1 green zucchini, sliced

1 yellow squash, sliced

1 patty pan squash, sliced

1 red pepper, sliced

1 onion, sliced

5 cloves garlic, sliced

¼ C capers

¼ C white wine

1/4+ C fresh basil

Parmesan Cheese

Salt and pepper to taste, not too much, sauce is flavorful.

Add 1/4+ Cups fresh basil on top of vegetables.

Garafalo radiatori pasta

Pasta

I used Garafalo Organic Pasta, but use your choice!

Cook to al dente and set aside. I usually add a bit of lemon olive oil, stir, and cover in hot pot that it was cooked it.

Roasted Garlic Bread

I purchased this from Costco, sliced it, cut slices in half, wrapped in foil and warmed in the grill.

I serve this with little olive oil and vinegar dishes. This time I used EEVO and Balsamic Vinegar for dipping the bread into.

Huckleberry Lemonade

Huckleberry Daiquiri mix was given to me as a gift so I put 2 T of it into this:

2 peeled lemons (use up the one used for zest)

4 C water

1/3 C sugar

10 drops stevia

Blend in Vitamix or blender with ice.

If mixing with rum, blend rum into the mixture in strength desired.

If making lemonade, add 3 C water to make ½ Gallon Huckleberry Lemonade.

In this order I found success:

Make lemonade

Make Lemon Sauce (if made ahead, just get out and put on stove to warm when pasta is cooking)

Cut vegetables for sauté

Slice bread and wrap in foil

Set table

Get pot full of water ready to boil for pasta

Bread fish and set on tray, ready to bake.

Cook pasta

Warm oven or grill for fish

Bake Fish

Plating

Place pasta on plate with vegetables on top. Place fish on top of vegetables and sprinkle with parmesan cheese.
