I should at least tell you why I’ve been so incredibly negligent with this blog. I was the “Wedding Coordinator” for my son’s wedding, which occurred on September 1, 2012. The wedding took place at my home, which meant a lot of work for me and friends who volunteered.  I am going to share with you the recipes for the Rehearsal Dinner. This menu fed about 20 people.

Recipes

Spaghetti Sauce

2 lbs. ground meat, cooked, rinsed and drained

1 lb. Italian Sausage, cooked, rinsed and drained

1 15 oz can diced tomatoes

1 5 oz can tomato paste

2 28 oz cans tomato sauce

2 C carrots, diced

2 C red pepper, diced

2 large onions, diced

1 dried cayenne pepper, seeds removed, crumbled

8 cloves garlic, minced

5 bay leaves

½ C basil, fresh, sliced

¼ C Mediterranean oregano, sliced

¼ C French thyme, off stems

¼ C Red Wine (or so)

2 T Italian seasoning mix

1 t salt

1 T sugar

Start this recipe by early morning of the day you want to eat it or the day before.Cook meat, place in screen strainer, rinse and set aside.Sauté the carrots, onion, peppers and garlicPlace meat, sautéed vegetables, and the rest of the ingredients in a 5 quart slow cooker on high. Allow it to come to a boil, and then turn to low and crack the lid to allow it to reduce.I rinsed out all cans with water and added that water to the crock pot. You may stir it, but you can also leave it alone. Boil spaghetti noodles (I used thin spaghetti noodles from Costco) to al dente, strain.

Yummy!Garlic Bread

2 loaves French bread

Butter mixture:

1 lb softened butter

10 cloves garlic

2 t salt

Place in food processor and blend until well mixed.

Slice French bread lengthwise.

Spread butter mixture thinly on both sides.

You can sprinkle with dried or fresh minced parsley if you want.

Put back together and slice in 1 inch pieces.

Warm in outdoor grill or oven until butter thoroughly melts. Usually 15-20 minutes.

Strawberry Lemonade

Strawberry Lemonade

3 lemons

½ C fresh strawberries

1/3 cup sugar

11 drops stevia

Put peeled and deseeded fruit in blender with sweetners and cover with water. Blend on high for 2 minutes.Put in 2 quart pitcher filled with ice, top with water if needed to make the 2 quarts.
