Grilled Salmon

This is a deceiving title because  I literally baked it outside on the grill.

1,  2 lb filet of Natural Alaskan Sockeye Salmon

1 lemon sliced into rounds

1 t smoked salt

Black pepper, coarsely ground on top.

Pea Salad

4 C petite frozen peas, thawed

½ C diced jicama

½ C diced onion, red preferably

5 slices Turkey Bacon, cooked and diced

Dressing:

¼ C Sour Cream

1 T sugar

1 t salt

½ t black pepper

1 clove garlic

¼ C Olive Oil

Put 1st 5 ingredients in blender and pulse until mixed.

Turn blender up until on high and drizzle olive oil into it until completely emulsified.

Stir Dressing into Pea Salad until everything is coated.

Serve Pea Salad over baby Spinach leaves.

Place remaining dressing on table for those who want more.
