Prepared fast food chicken nuggets BEWARE! Talk about a great KIDS’ MENU! Wow! After reading the recipe you will be convinced this is a much better alternative.
Almond Crusted Chicken Fingers
Baby Carrots and sliced Cucumbers
Almond-Crusted Chicken Fingers(1 9×13 or 2 8×8 pans)
1 -1 ½ pounds chicken tenders (see Ingredient Note)
Canola or olive oil cooking spray
1 C almonds
½ C whole-wheat flour
3 t paprika
2 cloves garlic
1 t dry mustard
½ t salt
¼ t freshly ground pepper
1 T extra-virgin olive oil
1 large eggs
Spray pans with nonstick cooking spray.
Process almonds first, then add flour, paprika, garlic, dry mustard, salt and pepper in a food processor; process until the almonds are finely chopped and the paprika is mixed throughout.
With the motor running, drizzle in oil; process until combined. Transfer the mixture to a large bowl.
Take about 1+ C of almond mixture and place in shallow tray.
Whisk eggs in a second shallow dish.
Coat chicken tenders with egg.
Transfer each tender to the almond mixture; turn to coat evenly.
Place the tenders on the prepared pan and coat meat with canola or olive oil cooking spray; turn and spray the other side.
Place plastic wrap over tenders before placing lid on.
Preheat oven to 475°F. Line a baking sheet with foil. Set a wire rack on the baking sheet and coat it with cooking spray.
Bake the chicken fingers until golden brown, crispy and no longer pink in the center, 20 to 25 minutes.
Ingredient note: Chicken tenders, virtually fat-free, are a strip of rib meat typically found attached to the underside of the chicken breast, but they can also be purchased separately. Four 1-ounce tenders will yield a 3-ounce cooked portion.
