Cilantro Lime Pesto
- 1 ½ C packed cilantro
- ¼ C walnuts
- 6 cloves garlic
- ¼ C Lime Juice
- Salt and pepper to taste
- 1/2 C olive oil
This can be made ahead in large batches and frozen in portion servings.
Cilantro Lime Pesto Fish Tacos
Slice an avocado, half for each person.
Place pesto over any white fish such as cod, halibut or sole and bake until flaky.
Serve a piece of fish with a softened tortilla, avocado, lime wedges and herb and greens mix.
Top with Creamy Cilantro Sauce or salsa and eat!
Creamy Cilantro Sauce
- ¾ cup low-fat sour cream
- ¼ cup mayonnaise
- ¼ cup lime juice, from 2 to 3 limes
- 1⁄8 t garlic powder or 1 minced clove garlic
- 2 T cilantro leaves, minced
- 2 scallions, minced
- ½ t cumin
- ½ t salt
- 1⁄8 t ground black pepper
Cucumber Basil Lemonade
- 2 lemons, peeled and deseeded
- 1 lemon sliced
- ¼ C fresh basil
- ½ small cucumber
- 5 C water
- 3 C ice
- 4 packets Truvia (or any sweetner of your choice and as much as you like)
Place 2 lemons, 4 slices of cucumber, peeled, sweetener and 6 basil leaves in blender with some of the water. Blend 2 minutes in Vitamix until very smooth. Pour over ice in quart pitcher and fill with remaining water.
Garnish with unpeeled cucumber slices, basil and sliced lemon. It is gorgeous as well as refreshing!
