Caesar Salad

Flounder Mediterranean

  • 1-2 lbs flounder or white fish (cod)
  • 5 Roma tomatoes (remove skin) or 1 can diced tomatoes in juice
  • 2 T olive oil
  • ½ onion, diced
  • 2 cloves garlic, minced
  • ½ t Italian Seasoning
  • ¼ C white wine
  • 24 Kalamata olives, pitted and chopped
  • 4 T capers
  • 1/2 C artichoke hearts
  • 1 t fresh lemon juice
  • 6 leaves fresh basil, chopped
  • 3 T fresh grated parmesan
  • 6 leaves fresh basil, torn
  1. Preheat oven to 425 degrees F.
  2. Heat olive oil in sauté pan over medium heat.
  3. Sauté onion in oil. Add garlic and Italian Seasoning.
  4. Stir in tomatoes and cook until tender.
  5. Mix in wine, olives, capers, artichoke hearts, lemon juice and ½ the basil.
  6. Reduce heat, blend in Parmesan Cheese and cook until the mixture is reduced to a thick sauce, about 15 minutes.
  7. Place fish in a shallow baking dish, cover with the sauce and top with remaining basil leaves.
  8. Bake 12 minutes in the preheated oven until fish is easily flaked with a fork.
  9. Serve with rice pilaf and Caesar salad.

Caesar Salad

Caesar Salad Dressing

  • 1 T fresh lemon juice
  • 2 cloves garlic, minced
  • 1 t Worcestershire Sauce
  • 1 t salt
  • 1 t Dijon mustard
  • ¼ t black pepper
  • ½ C Olive Oil
  • ¼ C parmesan cheese
  1. Mix all ingredients in bowl except oil.
  2. After mixed slowly incorporate the oil to emulsify the ingredients.
  3. Serve over torn Romaine lettuce topped with croutons and shaved Parmesan cheese.
