What is Corrigan’s Cookday? It starts in the corners of my mind dreaming of foreign places: their tastes, their sounds, their sights and their smells. In Morocco, what would a family be eating? what sounds do they hear? what do they smell? what do they see? and how does it taste? I research Moroccan dishes, where is the country? What do they grow in Morocco? I find recipes, try them and adapt them to be used during a cookday. When they are perfected, they are added to a long list of recipes that are able to be prepared with several friends for freezing. When the mood is right, they are broken free from their frozen state and added to other cultural concoctions to make an entire cultural experience…what are you dreaming of?….
